Move over chocolate chip. It's Taffy Season! Try these fluffy, refreshing Mango Chili Taffy frosted Lime Cupcakes. Enjoy these warm summer months with a tastefully balanced, sweet, lime packed mango chili treat.

Here's everything you need, plus a video tutorial on how to make these sweet and zesty cupcakes:

All Ingredients - Sugar, Lime, Eggs, Butter, Heavy Whipping Cream, Sour Cream, Baking Powder, Vanilla Extract, Salt, Flour, Muffin Sheet, Powdered Sugar

Ingredients:

  • 1 1/2 cups of flour (substitute with coconut flour)
  • 1 cup of sugar
  • 1/3 cup of sour cream
  • 1/2 cup of butter, softened to room temperature
  • 3 Egg Whites
  • 4 tbsp of Whole Milk
  • 1 tsp of vanilla (Feel free to use almond extract rather than vanilla if desired)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp of Lime Juice

Now let's get baking:

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Zest and Juice the Limes. Save the extra Zest for garnish.
  3. In a large bowl, cream the softened butter and sugar together.
  4. Add Lime Zest, Sour Cream, Vanilla Extract, Egg Whites while you stir. Mix on medium-low speed for 1-2 minutes until most of the lumps are gone. (Tip: For easier mixing, cut your butter into single cubes.)
  5. In a separate bowl, whisk flour, baking powder, and salt until evenly mixed.
  6. Combine the dry ingredients with the butter mix, adding milk and lime juice throughout the mixing process. Continue mixing until it becomes thick and sticky. Just lower the speed if you are using a hand-held mixer.
  7. Add cupcake batter to the pan, filling the cups ¾ of the way.
  8. Bake for 14-17 minutes. The perfect time to start on your frosting!

*Once you remove them from the oven, let them rest on a cooling rack or a heat-safe surface before applying the Taffy Frosting.  

Taffy Frosting Ingredients - Powdered Sugar, Butter, Salt Water Taffy, Heavy Whipping Cream

Here's what to use for this super simple sweet taffy frosting:

  • 20 pieces of Sweet's Taffy (We used 20 pieces of Mango Chili Taffy)
  • 2 Tbs Heavy cream
  • 2 cups unsalted butter, soft at room temperature (cut into small cubes)
  • 4 cups of powdered sugar (or more if you want it to be a thicker, fluffier consistency).

Now let's make our Sweet Taffy Frosting!

  1. Place a medium-size saucepan over medium-low heat.
  2. Add your taffy pieces and heavy cream into your pan and stir continuously until smooth, remove from heat. (If it starts to bubble, lower the temperature just a little bit.)
  3. In a medium bowl, combine your powdered sugar with your butter cubes and mix on low until you have a sticky, frosting-like consistency.
  4. Add your melted taffy into the bowl and continue to mix until all of the colors have mixed in. *This is where you will continue to add more powdered sugar if you wish to make it thicker, but add a little at a time, a little goes a long way!

That's it! Time to decorate!

Pipe on the frosting, garnish with leftover Zest, and thinly sliced lime peel.

Can I make this with Mango Chili Bears instead of taffy?

I know this is a crazy question, 😂 but my grandmother used to work for Sweets Candy in the 40’s. Is there anywhere I can find photos or files from that time period to help in writing her history? Thank you 💕
